I finished up my hop oast a while back.

I ripped a 3/8" strip off every board. Then stapled the screen to the larger box frame, and glued/nailed the strip on. This hopefully will help keep the screen on a bit better than just staples alone.

It worked good with two racks about 1.5 layery deep with hops (12 gallons for volume). I definitely made it larger than I need right now, but at least there is room for growth! This will hold about 10 gallons of hops per tray.

However, I'm not sure the fans are going to be large enough for a full oast.

Looks awesome.

I don't even grow my own hops yet, but I've had the idea of building something very similar to what you have except for mounting a box fan on the under side. I'll be curious to see how this works for you.
