Need some ideas this year for wine making

I was able to get 5 gallons of juice from my vines (white grapes) and have them currently fermenting. I really wanted to do something different this year, like winecoolers, or something else besides the tradiional wine. Any ideas?

I was wondering if I could kill the fermentation process and then add some fruit juice or crushed real fruit and then bottle? Would I need to add campden tabs after adding in fresh fruit to the mix before bottling? Also, any thoughts on adding alcohol to the mix, such as everclear and if so how much for 5 gallons? Any ideas or suggestions for something different would be great. Thanks!

This will be my fourth year, and I love the whole process!!
