Shelflife and Storing opened pack of dry yeast

Hi guys,

I brewed a belgian quad, which i figured needed fresh yeast for bottling. so i bought a 2 dollar pack of t58 yeast ( i also used this in primary).

Anyways, i just cracked it open and realized i only need 1 g for bottle conditioning. The rest of the pack is paper clipped and in fridge but according to fermentis site, its only good for 7 days in the fridge after opening? WTF is this true, its dry yeast... I was going to use it to brew a new beer 15 days from now

The yeast may be good 15 days from now if you take it out of the frig. Refrigerators are full of moisture and bacteria. Put the yeast in a sealed paper envelope in a dry area.
Vacuum sealing is best if you have that option.
