I've read that for a 5 gallon batch a 30 second oxygen infusion is the way to go. Should I do 1 minute for a 10 gallon batch? FYI I am using a 15 gallon fermenter and not two 6.5 gallon carboys

I personally do 2 minutes of O2 for 5 gal. But otherwise, more beer needs more time. Maybe try at least 2 min for your 10 gal batch?

would anything really happen if you did too much O2? I just did about 5 mins of 4L/min on my 5gal APA...it wasn't the greatest stone but could too much O2 do any harm?

Yes, supposedly hot alcohol flavors. No personal experience though, I do maximum of 2 min at 1-2L/min on high gravity ales or medium gravity lagers.
