I'm using an old 2-gal Mr. Beer plastic keg as a small batch fermenter for experimental recipes between larger runs. After one week there is still a small krausen on top. Safe to assume that fermentation is still taking place? OG 1.058 and have been tempted to take another SG reading.
 
No way to definitively tell unless you start taking gravity readings. But I wouldn't do that until it's been at least two weeks. Be patient. Do you have an idea of what the FG should be?

I usually wait three weeks before taking my first gravity. If it's where I expect it to be, then I'll take readings for two more days. If gravity is steady for three days, then okay to bottle.
 
Would like to get it to 1.018 or better. I'll just wait another week. Thanks.
