Does anyone know anything about Joseph James' yeast strain? I had their Red Fox RIS last night, and it almost had a sour character to it. I was curious if this is typical of their offerings, or unique to this brew. Or perhaps they just blended in a sour? I checked their website and they are not very informative about how they brought about this flavor profile. Just curious if anyone had any insight.
Red Fox is worth a try, FWIW, if you see it. Very interesting beer.
