Hello..I have a BGSA that is going on 3 weeks now..I used the "Duvel" fermentation schedule pitched at 60*F and raised the temp to 82*F over 7 days..the OG was 1060 going into primary..i added 1.5 lbs sugar a few days in..i took a hydro reading on i believe day 8 it was at 1008 pretty much on target..it tasted pretty much like duvel very dry,pear esters but the alcohol was a little hot not like solvent but it was pretty prominent..i am gonna let it sit on the primary cake for maybe another month to help mellow it before lagering...what would you all do in my situation? if i decide to extend the aging should i rack off the cake or just leave it?
