Which appears to be somewhat poorly researched for an article starting in the British Isles...

He added: "I don't know the tricks that Guinness uses, they could be adding a little surfactant to get the head just right - that is just pure speculation on my part."

I had a professor who went on sabbatical working for Guinness in Dublin. His job was pretty much identical to these guys: he was studying the properties of foam. At least the testing would be fun.

if he did so much research on why guinness has it's head, he would have know. Hell a simple search on this site will reveal the answer.
