So I'm working on a sour brown right now. I pitched the lacto a couple days before I pitched the yeast. well I got a nice krausen going on at the moment but it made me realize. I am going to let this sit another couple months before I do anything else with it. Is this beer good to sit on a yeast cake for about 6 months?
 
From what I've heard - yes, that's fine. I asked the same questions recently, because I just started my first sour brown using Roeselare. Its a little over a month in and I plan on leaving it on the yeast for at least 6 months, and possibly a year, before doing anything with it.
