I see threads like this all the time. I decided to check on some of my beers I have going and was planning in kegging this blonde this weekend. This beer will be 3 weeks old on Saturday. The protein blob has been there for a while. The bubbles however havnt been. That is a new development as of the 9th.

Little back story. This fermentor was in my garage. I believe last time I used it I hosed it out and left it. I opened it up and it smelled all sorts of funky. I pbw'd it ( I know not smart. Don't drink and sanitize) then threw some startsan in it. Smell was gone, racked the batch over. I'm guessing this batch is funk'd what are your thoughts. Right now I have a flanders red, a sour blonde and a wild caught saison going. I was really hoping to not have 20 gallons of funk going at once.

yeah that looks infected. you can either let it ride and see where the infection takes you, or dump. if you keep it, i'd inoculate with a little brett. if the infection is brett, the bugs will work out a balance. if you don't have brett in there, brett can clean some wild yeast weirdness.

a rinse of star san isn't always going to get wild bugs out of plastic (hence the reason some people won't use plastic for both funk and clean beers). looks like something might have crawled in there prior to your pbw+SS regime, and wasn't kicked out.

The barrel smelled a bit sour. Now that I think about it, I just hosed it out and forgot to but a needs cleaning sign on it.

I'm in the same boat as you. I think I'm going to rack it over to glass and let it ride for a few months. See what happens. Same blobs and a very similar milky pellicle has formed. Mine was somewhat intentional. Brett c primary. I think I might have something else though. Definite leather funk.

Mine looks completely different even today. Man when this stuff goes south it changes FAST!

I just tasted it again today and it's not bad. Almost feel that it's just Brett. There is no sour taste. It tastes a little barn yard ish. But that's it. Oh well I moved it to the back of my pantry by my two other sours and we'll see how she goes.
