Bottleing a flat Lambic Mead <Questions>

So I'll be bottling one of my lambic meads very shortly here. It's over 10.5 months old. I will not be carbonating the mead, and was wondering if it's safe to bottle one in a 750ml Wine bottle with a cork, or if the bugs will find some random thing to eat and cause a bottle bomb while it is cellaring?
 
Whats the gravity at the moment? If you'r bottling it still and its almost a year old I dont think you have to worry about bombs, although I dont think wine bottles are great for any real carbonation. Why not get a champagne or Belgian 750ml to cork so you dont have to worry at all?
 
I'll have to check the gravity when I get home. I won't be doing anything to carbonate it, I just want to make sure nothing weird is going to happen as I haven't made a sour before.
