For some reason NB sent me a wrong bag of grain. Customer service was great however and fixed the problem in time for my brew day. Nonetheless, I still have this Saison kit sitting around and I'd like to make something of it soon. I'm not a big fan of Saisons though. It's 5 Lbs crushed Pale Wheat and 3 Lbs crushed Pilsen. All mixed together. Could I add more wheat and make a Hefeweizen out of it? Any ideas?

Wouldn't you end up with a stuck mash with that amount of wheat? I'd add more pilsner or two row to bring the proportion of wheat to 4/10 to brew hefe or 2/10 to brew a pale ale or a Saison. Mmm, nice dry pale ale with two row, pilsner and wheat :)

Sounds like a fine grainbill for a hefeweizen or an American wheat beer. If you've got a 1/2 pound or whole pound of carapils, throw that in there too. Done!
