Default Does this recipe look OK? - (wheat)

I plan to do this tomorrow. I haven't done any AG wheat mashing yet. I'm using hops that I happen to have. Any suggestions?


Ingredients

0.50 lb Rice Hulls (0.0 SRM) Adjunct 4.35 %
5.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 43.48 %
3.00 lb Wheat Malt, Bel (2.0 SRM) Grain 26.09 %
1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 8.70 %
1.00 lb Caramel/Crystal Malt - 10L (10.0 SRM) Grain 8.70 %
1.00 lb Corn, Flaked (1.3 SRM) Grain 8.70 %
1.00 oz Hallertauer, New Zealand [8.50 %] (60 min) Hops 29.5 IBU
0.75 oz Liberty [4.30 %] (40 min) Hops 9.8 IBU
0.50 oz Lemon Zest (Boil 5.0 min) Misc
1.00 items Whirlfloc Tablet (Boil 15.0 min) Misc
1 Pkgs Bavarian Wheat Yeast (Wyeast Labs #3056) Yeast-Wheat

I would lose the rice hulls and one of the Crystal malts, probably the Carapils. I would also drop the IBUs or use different yeast. It just seems too bitter to work with that yeast...

You don't need the Cara, but if you kep it, 1/4 pound is plenty.

Keep the hulls though. That much flaked anything can make a sticky sparge.

I'd drop both the Crystal and Carapils, replace them with wheat and definitely use the rice hulls.

I agree that the IBU strikes me as high, but that's your bag; if you like hops, go fer it. With that hops schedule, you will obscure somewhat the ester profile from the yeast, but that's your decision. Personally I am not fond of hops in my Hefeweissen.

The lemon zest ought to add a yummy note!
