So this beer is finally carbed up a ready to drink. I had to change the hop schedule slightly because the Horizon hops didn't really do anything. I ended up with an OG of about 1.080 and I used 2 oz of chinook for 90 min, 1 oz of Cascade at 15 and 5, 0.75 oz of Centennial at 15 and 5, 0.75 oz of both at flame out plus 0.5 oz of Chinoook.
It is extremely balanced and not over the top. I was shooting for something like Sierra Nevada's fresh hop beers and I think I came pretty close. The bitterness in there and there is plenty of hop flavor and aroma, but it is balanced like an APA, just stronger. At first I was worried about the gravity, but the low mash temp made sure it was highly fermentable. If I was to guess the strength by taste I'd say maybe 6% instead of the over 8% that it is. I think this will be a staple recipe for my fresh hops.
