Default Brewsmith's 2008 Fresh Hop IPA

It's getting close to harvest time for my hops. I've got a ton of Cascade and Centennial, and a pretty good looking return on my Chinook and Horizon. My Willamette didn't do so hot, and it wouldn't work as well in a hoppy IPA anyways. As far as a recipe, I'm shooting for something with a reddish color but not so over the top that it's not drinkable. I'm barely into the IIPA, which is mostly just for some sort of style guideline.

Did you test for AA% in your hops? Did you just go with a norm for that variety? Recipe looks good. I would use a little less chocolate malt than that. You want the hops to shine in an IPA, not the malt. I know your using it for color, but I think the red will be there with the 120. My .02$ Cheers and happy harvesting.

No testing, just going with it. The chocolate malt is Pale Chocolate, just listed as Chocolate - Light so I can find it easier. It's half the color of regular chocolate, and gives more toasty flavors than it does chocolate. I don't want to go too much on the crystal malts because I want to keep it on the dry side. Plus the grain bill is so big that 4 oz is not really that much, less than 2%.

So this beer is finally carbed up a ready to drink. I had to change the hop schedule slightly because the Horizon hops didn't really do anything. I ended up with an OG of about 1.080 and I used 2 oz of chinook for 90 min, 1 oz of Cascade at 15 and 5, 0.75 oz of Centennial at 15 and 5, 0.75 oz of both at flame out plus 0.5 oz of Chinoook.

It is extremely balanced and not over the top. I was shooting for something like Sierra Nevada's fresh hop beers and I think I came pretty close. The bitterness in there and there is plenty of hop flavor and aroma, but it is balanced like an APA, just stronger. At first I was worried about the gravity, but the low mash temp made sure it was highly fermentable. If I was to guess the strength by taste I'd say maybe 6% instead of the over 8% that it is. I think this will be a staple recipe for my fresh hops.
