Hey guys I'm making a spin off of a BBQ flavoured Rauchbier, tells me to use Safale S-05 dry yeast but I'm looking to sub it with a Wyeast. Was thinking Wyeast 1056 American ale yeast ...

Based on info from Wyeast you could you one of several of their lager yeasts-2206, 2308 or 1450 Denny's Favorite.

I have found 1450 to be very different than US-05. Both have a very clean profile, but 1450 makes a beer with more body and finishes with a bit higher FG than 05 in my experience. In addition to 1056, 1772 would probably work well, although I have never used it.
