I was wondering if I could use some other than dme to make my starter for a hard cider I'm afraid that it would give it an off taste
 
If you use light DME you won taste it in the cider. You can always decant the cider too and pitch the slurry.
 
I just use apple juice. I sanitize the stir bar and yeast container. 900 ml of apple juice, Pitch yeast and let it go for a few days. Do not boil the juice!
