I couldn't find a thread related to this but...

I pitched the yeast on my first brew (American lager) without rehydrating. It seemed to ferment great and has been bottled for a week. Tried it yesterday and it was well carbonated and tasted decent.

I did the same thing with an IPA that I have fermenting and then realized I didn't hydrate either, but it too has appeared to be fermenting great for the ast week.

My question is, since I didn't hydrate the yeast, will it affect flavor in the beer at all and if not is it always necessary to hydrate it?

Not at all, rehydration is the proof test for dried brewing yeast. Some manufacturers specifically state on the package to sprinkle it over the wort, others tell you to rehydrate in sterile water at a specific temperature, yada, yada, yada.
 
Actually, hydrating yeast is not to proof it but to wake it up gently with water. Water wakes it up without saturating the cell with the sugars before it's awake.

You already found that dry yeast works without hydrating, however, you get more and healthier cells by hydrating.
