Yeast question

How, or maybe I should ask why, do yeasts affect the flavor profile of beer?

many many ways. they all have varying levels of esters, phenols, diacetyl, acetaldehyde, attenuation rates, etc which all effect the flavor in different ways. here's some basic info: http://www.howtobrew.com/section1/chapter6.html
