Dumb question: if I'm making a 5-gallon recipe and using only one package (5-7 g)of dry yeast, I should be using only ONE unit (typically a teaspoon) of yeast nutrient, correct...not one tsp per gallon?

The nutrient measurment is per gallon, how much needs to be added depends on the yeast and the type of wine being made, some types of yeast have high nitrogen needs and would create off tastes if not enough is provided. But 1 tsp a gallon is the normal measurement.
