So today I picked up my ingredients to make my Belgian Ale. I was meaning to get the WLP 570 Golden Yeast, but as I was ordering i drew a blank. I ended up getting Safbrew S-33... was told it would work. Later I read about it and realized that it is not like WLP 570.

So, my experimentation will begin... because i can't take the S-33 back now.

This is what I plan to do (let me know if you have any experience with the differences).

I am going to make 3 separate batches.

1 with Safbrew S-33 (5 gallon)
1 with Safale US-05 (just because I want to know the difference... might be a 3 gallon deal in my old Mr. Beer)
1 with WLP 570 Golden (5 gallon. I plan to just go ahead and order this for the experiment).


My recipes will be:

10 lbs Pilsen Light LME
1.5 lbs Cane Sugar
2 oz Saaz
Safbrew S-33

10 lbs Pilsen Light LME
1.5 lbs Cane Sugar
2 oz Saaz
WLP 570 Golden


10 lbs Pilsen Light LME (or equivalent for 3 gallon batch)
1.5 lbs Cane Sugar
2 oz Saaz
US-05 (I know it's not a Belgian yeast, but I want to try it just in case)


Thoughts? Past experiences?
 
Just wanted to know if anyone has any thoughts on this before I undertake such an event.

I would still like to hear how this turned out... I like all three yeasts even if S-33 is not the best choice for a Belgian. Now US-05 - is a my go to yeast - is even further from a Belgian then S-33!

Hope they were all good! But if these were suppose to be in a "Belgian" style then WLP570 is the only one that would taste like one - my guess.
