Recipe:
10 Lbs Weyermann Pale Malt
1.5 Lbs Crystal Malt 240L
Hops: .75 Oz El Dorado @ First Wort, .75 Oz El Dorado @ 30 mins, 1 Oz Yeast Nutrient @ 45 mins
1.5 Oz El Dorado Dry Hopped (5 days) after fermentation
60 minute boil time. Pre boil volume, 6.5 gallons, yield 5 gallons.
I am going for a fruity flavor profile, so I am trying to pick a yeast that will go well with the accentuated aroma's from the El Dorado hops which gives off pear, watermelon and stone fruit aroma. Should I use White Labs WLP 001 or WLP051? I haven't used anything from Escarpment Labs because they are usually sold out at the store I buy from. I could also go with the Omega OLY-004 West Coast yeast, which might bring out a bit too much of the hops, however I could reduce the hop amount if needed. I am thinking the WLP051 California V yeast will give me more of the fruity flavors that I desire in this beer.
