Hey guys,

So I've made a few honey beers where I added raw honey to my flame out and it's come out great. So my brewing assistants and I have begun discussing adding honey to fermenters in the form of raw honeycomb. Maybe a Saison.

So my question is, how much yeast do honeycombs contains, if any at all? I think it'd be neat to do a sort of wild ferment off of this, but if the cell count is abysmal then I'll just supplement with something else.

I actually do not know how this works, but I am intrigued. Since I am considering using some raw honey, not quite the same as a comb, in a brew soon this is a concern I´ve thought about too.

What I know about honey is that the later you add it the more flavor it contributes. That also means that more alcohol is present which could potentially kill off some of the natural yeast. How much of it is the question though.
