Hi all. I hope I won't annoy the group with an amatuer question but I could use some advice. Or at least, an opinion. I have never made fruit wine before - I've made hard cider and mead and my hubby has been a homebrewer for 15 years, but this is my first crack at wine. I have two batches I want to make tomorrow and two wine yeasts that my husband has had kicking around in his beer fridge. I'm sure both will be fine and do the job, but how would YOU match it? I have Elderberry Juice and Plum Juice. My yeasts are a Red Star Premier Blanc and a Lalvin K1-V1116. Which yeast would you pair with each fruit juice? Thanks!

Since plum juice tends to be acidic, my first choice would be 71B-1122, since that metabolizes more malic acid than other strains. Between the others, it really doesn't matter all that much as they should still do a good job.
