i'll finally be done taking my MCAT and applying to medical school next thursday, and to celebrate (and make up for a missed homebrew day due to my studies), i'll be brewing a recipe i've been putting together/fantasizing about for awhile now. feedback would be appreciated!

Of course I love hops, but my father realllllly loves hops. Funny thing is my father was typically a blue moon/yuengling with the occasional BMC type drinker.

Ever since I started brewing, he's turned into an even bigger hop head than I am.

He's getting ready to retire from the police force after 25 years of duty, and I figured I would thank him for paying for my college education and whatnot by brewing him up a beer he'd really love.

In matter of fact, I think I'll add another oz of centennial to the dry hop for the sake of symmetry.
 
my LHBS is out of centennial...they recommended subbing chinook or columbus...anybody have any experience with these subs?
 
I don't know if I'd bitter it with Cascade...maybe with Chinook or Columbus. Then sub the Centennial with Cascade. That's what I would do

I got nuthin to say about your hops. I haven't gotten into that kind of hoppiness yet :)
Be sure to save a few bottles for future career milestones.

I just got done making an IPA with both of those actually! Both strong bittering, very piney. Columbus is not for the faint of heart. It has a beeeeeauuuuutiful flavor though. Chinook is only slightly less bitter and I find it's flavor to be more well-rounded.
