So I got this again and have a Tripel starting to ferment at 66F. How warm have you taken this? Any off flavors due to higher temps after a few days?

I normally start cool, then after high Krausen let my ferments get up into the mid 70's to get more fruity flavors that I enjoy.

Do you have a way to hold it at 65, or is it just a free rise with that as an ambient temperature?

Ambient 66 in my bathtub with a fan blowing on the carboy. After a few days I usually shut the fan off and wrap it up in towels to let it get warmer.

You should be fine with a water bath to hold it, after the first couple days let it rise as it wants to.
