I accidentally ordered two packets of Wyeast 3522 belgian ardennes with my last order, which i haven't used before. I had been planning to do a belgian dubbel soon with a grain bill of belgian pilsner, a little munich and some special B with a couple pounds of sugar added during peak fermentation. i got this strain for a palm speciale clone because i heard the flavors are a little more reserved and subtle than other belgian strains. would it work for a belgian dubbel or should i just use it for a nice belgian blonde?
