I'm curious if anyone has used this to step mash. I am curious your thoughts on it for being the price it is compared to other set ups.

That is the one I use on my 15 gal HLT. I mostly do 6 gal- kettle full batches, so 5.25 into fermenter. With 4 gal in the HLT it gets to boiling before the 2 hr timer shuts it off. I can do one temp increase (step mash) by striking in at 1:1 liquor to grain then add boiling liquor to get the next temp. Mine came with a copper pan, wish it would have been cast iron because everything sticks to this.

I use a 42qt stainless steel pot. My theory is heat using the stove until temperature hits close and move over to the nuwave with the temp set at say 125. Let it hold for as long as needed then transfer back to the stove for heating to the next step. Idk if this would work im theorizing and I'm very new to brewing

You need to make sure your SS pot is induction compatible. Many stainless steels are not compatible, but some are. If it isn't, you won't get any heating with the induction "burner."
