I’ve read others questions on the yeast, but, the answers I read were dated a couple years ago. Wondering if any new info has surfaced. I’m doing an Session APA with an OG of 1.032. I pitched last Saturday night at about 11pm. The fermentation took off full steam about 24-36 hours into ferm and settled down 2 days ago. I know that a stable hydro reading is gonna mean ferm is done, but, it seems this yeast really slows down towards the end. Have others experienced this? Should I let this sit in primary for a long time or rack it over to secondary to finish up. With an estimated ABV being that low and temps staying at a stable 70-72 at max, shouldn’t this beer be done by now? Your experiences with this strain would be helpful.
