Now that we are coming to the end of summer I was wondering what recipies homebrewers would like to brew for fall and winter. Yes I know its still hot (insanely so here in Texas). Are there any new styles for the up coming seasons that you would like to brew? What ingredients make it into your cold weather styles? Is there a particular brew you would like to see a clone recipe for?

I've been working on recipes for a pumpkin ale and breakfast(french toast) stout for the fall months.

I'll also be brewing a scotch ale and tweaking my IPA recipe.

This fall is exciting time in my brewing life as I'm going away from partial boil extract brews to BIAB partial mash full boils.
 
Haha, every now and then when I get bored at work, I browse this website and try to formulate a plan for brewing for the next few months. It's fortuitous that I would browse to this thread. At the moment here is what I'm planning:

For October/November:
1- IIPA (Brewed)
2- Pecan Nut Brown (Brewed)
3- Ginger Peach Wheat (Next weekend)
4- Some sort of simple blonde ale (the next weekend after)

For a New Year's Party:
1- Carbonated Edworts Apfelwein
2- Jalapeno-Cream-Ale, but possibly with different peppers.
3- Some sort of spiced holiday stout.

For a St. Patrick's Day Party:
1- Irish Car Bomb Stout
2- Imperial Irish Red, recipe still in formulation.

Huh, looking back that seems kinda specific for so far into the future, but who knows, plans can change.
 
I'm about to tackle my first IIPA and probably an Imperial Brown(probably the Janet's Brown). If I can find a recipe for Southern Star's Buried Hatchet Stout, I'd definitely like to try to replicate it.
 
I have a wee heavy on deck that, hopefully, I can be drinking in Jan/Feb. And I recently did an oatmeal stout and a Pliny clone that I'm hoping to drink while watching football.
 
I want to try...
A s'mores stout (mashed with Graham crackers),
A chocolate malted milk stout (I imagine a Whoppers flavor to this one)
A new Irish red,
A batch of hard cider
And pinning down my spice additions to my wit.
 
As for clones, I haven't done a thorough search for a while, but I've never been able to find good clone recipes for:
Bell's Third Coast Beer (not the Old Ale) and some of their seasonal beers like Rye Stout.
