anyone... just wondering if you can stick a standard thermometer into a thermowell and it'll work or if you need some kind of special thermometer

Sure, that's what thermowells do, but you'll have much more accuracy if you put the iGrill probe in direct contact with the wort using our PCOMP fitting:

First post here, been lurking for a while... as for a wireless thermometer, I would higly reccomend a Maverick et732 (amazon has good prices). I am new to brewing, but have been running my smokers for a few years and the mavericks are the only ones that seem to last and have a range that will allow you to go anywhere in the house and monitor temps whereas the iGrill is bluetooth, and such has a very limited distance (30ft clear line of sight). When I was calibrating my keezer, I used the et732 to monitor temps without having to constantly run up and down stairs, opening and closing the door, etc. When running the smoker, can have be in the house watching football, while the snow flies, and glance down to see the temps. Battery life is great too. While calibrating my keezer, I had it running for 5 days straight, even after I used it in the smoker for 16hrs. Still havent had to replace the batteries. You can even get aditional probes on amazon with 6ft leads on them too. I have been using it for years, without any issue, and highly reccomend it.
