so I am bottling my first brew but getting ready to start my bext batch but for the winter. i need some help. i want to brew a winter batch but don't know what to go with. i have been thinking about a pumpkin ale or a winter ale, but i have not tasted either. i can't find any at the store either to taste test. any ideas on a good beer to brew. all suggestions are worthy. let me know what you guys think.
 
It's kind of late to do a "big" beer for this Christmas, but there may be time to do a smaller beer with spices, or even a fruit beer. Check the recipe archive under fruit beer, ****e beer, or specialty beer for some ideas.
 
I brewed Midwest's Winter Ale extract kit (one of my last extract beers) back in the Spring. I bottled it about a month ago, and it tasted very good. I'm hoping it'll be drinkable by the holidays. The big beers take extra time in the secondary and the bottle before they completely mature / condition. I've got an Imperial Stout on the shelves that went a year from fermentation before it got really nice.
