I am going to be brewing a stout this weekend. I used Papazian's Toad Spit Stout as a starting point for my recipe. He calls for Northern Brewer as the bittering hop. For finishing, he recommends Willamette or Fuggles. My LHBS didn't have either of those two. I found several hop substitution charts that recommended either Target or Tettnang as Willamette substitutes, so I picked up some UK Target and German Tettnang.

Most charts show Target as a bittering hop and Tettnang as a finishing hop. Since I am looking for a finishing hop in this application, do you think I'd be better off sticking with the Tettnang? Anyone have any recommendations?

I actually do have some Nugget hops that I could use in lieu of Northern Brewer. Unfortunately, they didn't have glacier either.

This is what I have on hand.

Northern Brewer (9.4%)
UK Target (7.5%)
German Tettnang (3.5%)
Nugget (14.3%)
Summit (17.6%) (I'm thinking this in not appropriate)

The Tettnang should work. Half the fun in brewing is experimenting. I once did a hoppy english brown with a hop schedule like you would do for a DFH 60 using nothing but european hops (most of them were nobles). It was earthy, but the hops complimented the malt very nicely.

Thanks for the response. I think I'll try the Tettnang. This is just my second brew, so I'm trying to balance tried and tested recipes vs experimentation. In your opinion, would you recommend pairing the nugget with the tettnang or stick with the original plan for northern brewer?

Personally, I think Nuggest has a more herbal aroma to it when compared to the earthy/spiciness of Northern Brewer. I think northern brewer has a little mint-like aroma. It kinda depends on what you're going for. If you're looking for a more traditional profile, stick with the northern brewer. If all you're looking for is a tasty, balanced brew, then you're good with either. These are both bittering agents, and as such, Nugget will give you a little more punch than Northern Brewer.
