Hello all,

In the midst of my first attempt at wine. Doing a Cab kit. Moved wine to secondary on 11/27/16. My kit instructions said to let it sit in secondary for only 5 to 7 days, then move to bucket and degas. As today is 12/8/16 and 11 days in the secondary, and I probably cant move to bucket until Saturday (13 days in secondary), is this still OK being the instructions said to keep in secondary for only 5 to 7 days.

I would leave it there even longer, 1-6 months longer.
This way it will degas itself and bulk age.

Did you use oak in the secondary?
Oak chip exposure may be why they are suggesting you rack early. The longer it stays in contact the more oak flavor it will absorb; if you want just a hint of oak you will need to move it soon.

No oak.
 

Let it sit 3-6 months then. Wine gets better with age (to a point) and it ages better in bulk storage than in bottles. If anything the harsh "hot" taste from the high ABV will mellow out.
The instructions are designed to get it into your glass as soon as possible.
 
I make wine from the 28 day kits and while I dont have the space to have more then one kit going therefore I also dont really have the time to give them a year to bulk age I double the printed directions in general and that seems to be enough that Im happy and my family is happy with the results. though I will say its not as good as a 30plus dollar bottle they seem to be better then the 30 dollar Boxed wine I was drinking before. ( and I do manage to set aside a dozen or so bottles for saving to the year or so length.)
