Hey guys and gals,
I searched around and found an attempt at a all grain Widmer Bros. Drop Top clone. After brewing this beer (two weeeks in primary and three weeks in secondary) and finally getting it into bottles I waited two weeks. At the two week taste test this stuff is still vilolently sweet. I added 8 oz of lactose sugar in the last ten minutes of the boil. OG reading: 1.050 FG Reading: 1.016
My question is. . . will this sweetness mellow out with some more age on it. I know that its a non-fermentable sugar, anyone have any insight?

Because it's non-fermentable, there's not much going on in the bottle that can affect it. I think you're stuck with very sweet beer: 8 oz is a lot, that's twice or more the amount I usually see for a 5 gal batch.

You could try your hand at blending, and mix it up with another batch then re-bottle. I think a hoppy amber might be a good match, given how hops and sweetness work together.
