I have a batch that has been conditioning in a keg for just about 3 weeks at room temperature. I plan on putting it in my kegerator this weekend. My question is will the beer continue to condition or get better each week even though it will now be refrigerated, or does conditioning stop once the beer gets cold?

It will still condition/change. Just at a lot slower rate. Your last pull from the tap will usually be your best tasting brew......
