This started out as a cyser with 12lb honey and 4gal apple juice, and fermented for 13 days in primary before I racked it to secondary along with 7.25lb of canned cherries. It has been in secondary for 6 days now, and I haven't been paying attention to it since racking, but now I realized that there's a ton of yeast sediment! At the end of primary there was less than 1/4" of sediment, but after 6 days in secondary, there's over 1.25". Should I rack it again soon? I feel like I should let the cherries sit for a while longer.
