White Labs WLP023, top cropping!

Hadn't used this yeast in ten years or so and just used it on Sunday. The beer's starting to slow its fermentation now, finishing up, and man, it built up a huge head of foam. At high krauesen, it didn't quite manage to blow off. Almost, but it was short by a few inches. 25 liter demjohn with about 20.75 liters in it. Now, as it's finishing up, it IS blowing off. Crazy. Talk about top cropping.

No, not concerned or anything. Perfectly fine behavior. Just didn't expect that.

It's a british bitter, btw. Looking forward to drinking this one.

Guess this would be a grat yeast for those folks who grab their yeast from the top of the fermenter....
