I have 5 gallons of fresh pressed apple cider that I would like to make into a sparkling hard cider. Which yeast would you recommend to make a sweet tasting sparkling cider?
 
Nottingham is also quite popular and what I use. For sweet and sparkling you're going to have to backsweet, carb then pasturize. Big thread on it round here.
