I am trying to go through the hops I have sitting in my freezer so they don't get too old. I am about to do a 10 gallons batch of pilsner that will be split into 5 gallon buckets and fermented with 34/40 dry lager yeast and ECY Kolsh yeast. I know I should be looking to german or czech noble hops but I have a bunch of the following:

Galena
Willamette
Nugget
Amarillo

I am tempted to use Galena for bittering to 25ish ibu and a small 15 min addition of willamette.

Is this going to make for funny tasting pilsner/kolsh?

In order of my preference:

Willamette is a great mild hop. Good flavor and aroma, decent bittering. Kind of like Saaz in that respect, although English flavors.

Amarillo is tasty. Good bittering and aroma, but citrusy. You could call it an American pilsner.

Galena should be milder, in both aroma and bittering, than Nugget. If you elect to go with Galena or Nugget, I'd use first wort hopping.
