I’ve currently got a beautiful honey brown ale in my conical for primary. OG is 1.056 and I’m headed down to a FG of 1.012

I intend to transfer from conical to purged kegs with spunding valves. At what gravity reading would you transfer? 1.020? And then let it finish out??

Generally 5 or so points short of final gravity is ideal. I'm paranoid about missing spunding opportunity so generally do it at 10ish points.
 
Better to transfer too soon than too late. Are you confident that 1.012 will be your FG? If it might be, say, 1.015, then spunding at 1.022 wouldn't be too soon, it would just about spot on. I'd go with 1.022 as well.
