I am very new to all of this and just finished putting my first batch into a carboy. Now I am left with all of these dirty dishes. I washed them like I would each any other dishes, with liquid dish soap. My question is, do I need to soak everything in sanitizer now? Or do I wait until I am getting ready to brew my next batch?

The kit needs to be as good as possible for the next brew.
I am ott about this, so I sanitise before I put away, then wash and sanitise again before the next brew. Ott maybe. But you will see more about sanitising being right up there as one of the most important things in the process. Ott. Yes. Guarantee no carry over from one brew to the next.

I live by a simple mantra... O.H.I.O

Only Handle It Once

I would never take a little OCD away from anyone, but there is no logical reason to sanitize the equipment before storing it for the next brew. It will not still be sanitized when you take it out for the next brew day, unless you store it in a sanitary environment.

A good, thorough cleaning and rinse after the brew day is complete is all you need.

When the next brewday arrives, simply rinse all the equipment off and sanitize the components as you need them.

Just my thoughts... extra step that is not necessary.

I clean everything with PBW & rinse with tap water. Dish soaps have that sheeting enzyme in them to help prevent water spots that kills head on a beer.

I clean up after the brew

before the next brew I clean again, in case something go in it during the wait in the closet and then sanitize

I do not sanitize after the brew, but I am meticulous about the cleaning, no need to something in a crack or crevice to attract bacteria

Exactly. I soak my fermenters in PBW,scrub lightly with my bottling brush after a few days soak to loosen the already loose stuff. It then sinks to the bottom. I run all that out the spigots into an ice cream pail to dump in the head. Then run rinse water through it as well. On brewday,I take out the spigots & clean, brush & sanitize the parts with Starsan & re-assemble wet. Then run starsan through them before filling. Same with the bottling bucket & all the other stuff that touches the beer.
