Soo if i forgot to test my gravity befor adding yeast how do i know what to test too so i lnow its safe to bottle it all up. Can i test the gravity a day after i started and have a close estimate?
 
You can rack to a new vessel preferably with little headspace in a few weeks, once it visibly quiets down. That vessel should be able to off-gas with an airlock. Then just let it sit there until crystal clear. 2, 3, 6 months.

It's safe to bottle once there is no change to gravity readings taken over the course of a few days or a week.

Original gravity is only needed to know ABV. Bottle when fermentation is complete. Static final gravity readings tell you that regardless of OG.

The standard method is to test the specific gravity and when it hasn't changed in a week you can assume it's done.
