My recipe calls for maple syrup addition "a couple" days after brew day. However, it's been 2 days and the airlock is still bubbling about once a second. Should I wait for it to slow or stop before adding the maple syrup?

the reason you want to wait is so the yeast will continue to feed on the more complex sugars and not the simple sugars you're about to feed it. personally, i'd give it another day or two and then add. you can quanitfy all this by taking hydrometer readings, but you don't necessarily want to wait until it's all done to feed it the syrup, a little yeast activity still going will be good to keep feeding on the new sugar.
