Inspired by the sheer awesome-ness of Ithaca's Excelsior Thirteen, Im looking to brew a Wheat Wine-Ipa...code named Whipa'. I dont want to clone it, but I do want to make something in its likeness. when I checked out their website it says the ingredients are Malted Wheat, Unmalted Wheat, and Flaked Oats. Impressive lauter work for them I suppose. Its aggressively hopped with Sorachi Ace and Citra hops and you can tell. Its intense. At any rate, for those of you who may have toyed with wheat wines and think they have some intel on making one into an IPA, I look forward to your input!

Totally agree with this. I was up in NY state a couple of months ago. Did the Ithaca tour and came home with a growler of Excelsior 13. Great stuff!

Recipe doesn't look like a clone, but since that's not what your going for it looks interesting enough that I'd like to hear how it turns out.

It's a terrific beer isn't it? At first, I was a bit overpowered by it but as I kept drinking the 750, my taste buds adapted and I fell in love with the idea of a giant wheat ipa. To be honest, I felt like the sorachi ace was the dominant flavor, but I love it. The only other beet I've had as aggressively hopped with sorachi ace is Brokklyn's Sorachi Ace saison and o loved it as well.

Any update on this? I'm trying to form a grain bill right now based on Thirteen.

Sorry about that...I haven't brewed it. Its on my list but I think, much like most brewers, we get far more ideas on paper than we can get into our mash tuns! :rockin: This is something that will make up up further into the queue in the coming months.
