I think clove characteristics come out when fermenting in slightly cooler temps and the banana profile comes out with fermenting in higher temps. I doubt a starter impacts flavor.
I just did a hefe with wlp300, og 1.052, used a starter, fermented warm (low to mid 70's), and the beer tastes like banana flavored bubblegum with a barely noticeable hint of clove. Hope that helps.
For your Hefe I would make a 1/2 liter starter if you have a stirplate a little larger if not
I make a 2 liter starter for 12 gallons of Hefe slight underpitching brings out the esters and some other flavors . Temps around 68° will produce a nice banana flavor but not overpowering.
Also my hefe are usually between 1.056 and .062 depending on how good my efficiency was that day high for the style but I like it that way .
