What's this strange sediment floating in the top of my bottle?

Hello! I'm some what new to brewing. I've got a few batches under my belt. I brew a bit of everything but most recently I brewed a graf which is a beer and cider hybrid. I made a gallon of cider and brewed a Belgian tripel one gallon batch. I combined the two together in a two gallon fermenter. Primary and secondary fermentation went great. But about a week after bottling I noticed some strange sediment at the top of the bottles. If you shake or swirl the bottle it will disperse but within a few hours it'll float back to the top. I've done a lot of research and can't find anyone with the same issue So I'm hoping someone on here can tell me what this is. It has been two weeks now since I bottled and it does appear carbonation is complete. I'm just a little scared to crack one open but I may be doing it soon. Sincere thanks in advance guys from a concerned avid home brewer.
