So I hadn't planned to brew at all this weekend. I was just going to Dry Hop My Brett Trois fermented IPA. I had to run to the store to get the hops i needed and while there I decided maybe I should just brew something quick today that I could use the leftover Brett for.
So I put this grain bill together:

8lbs Floor malted Marris otter
1lb Vienna
1lb Cara-Wheat
1/2lb Cara-Pils

1oz Styrian Golding

So its currently fermenting with the Brett, and I am planning on transferring to a secondary and harvesting the Brett trois, and then adding Pedio to the secondary. How soon should I add the pedio? would it be better to just add at bottling and then bottle condition for a long time? How long should it go for? Any thoughts on how this might turn out with just the pedio? I have a sour going with both, and another with just lacto, so I thought one with just pedio might be interesting also.

Add at secondary, not at bottling. You need to be able to know if it gets ropey and when it's done being sick.
