Hello fellow citizens of Homebrew Town! I'm about to brew this Rodenbach 'Clone' and after balancing my checkbook I realized that I am broke..Covid really did a number on my business this year..Anyway, after stressing out for a while I decided that i'm just going to try my best to do a parti-gyle for most of my batches for a while to get more bang outta' my grain.

So, the question is: What style should my Petite beer be, or, what style is the grain bill (I want the petite beer to be clean), and what yeast should I use?

I like most beers so there really isn't something I would turn my nose up to. I was thinking I could cap the mash with some Caramel malt to make like a hybrid caramel Amber, or pitch some Belgian yeast to make something similar to a 'table dubbel', if there is such a thing, or just a clean yeast and make a malty 'pale' ale?

Any and all suggestions welcome. I'd like to go pick my grains up today but since I dont know what to do yet I will likely have to wait for tomorrow. Cheers!

My suggestion is to leave the grain as-is and pitch some Irish Ale | Wyeast Laboratories

Not exactly. A dubble gets a lot of the flavor not just from the yeast but also the candi syrup. A low gravity version without the syrup is a belgian single AKA Patersbier, and is pale. Traditionally that's what the monks would drink themselves.

A session Irish Red is a brilliant idea, thanks! In the spirit of pinching pennies I'm going to use up some of the odds n ends of hops I have on hand. This one will end up getting a dose of Magnum at 60, EKG at ~30 and maybe a touch of amarillo at FO since this one isn't brewed to any sort of style anyway. Cheers!
