I've been working on a new recipe, and was wondering what types of yeast all you brewers out there prefer. I have used American/Scottish strains in the past and was thinking of using yeast that leaves a maltier finish. I've been looking into different European strains to brew and compare with the same recipe fermented with American strains. The recipe so far is:
-Vienna: 80%
-Munich: 20%
-OG: 1.060
-IBU: 55
-I bitter with centennial and flavor with cascade

I'm just looking for different types of yeast to try, any suggestions of your past successes would be appreciated.

I made a highish gravity PA with the California Lager yeast that turned out really well. But traditionally I like US-05 which isn't exactly what you're looking for but since you asked that's what I tend to use for an IPA

For the 1187, did it take any longer to ferment than your usual choice?

It has always started and finished quicker than most despite of the rumors of slow fermentation. Flocculates like crazy! Literally like chunky milk if you do starters with it.
