Ok prolly a stupid question but my primary has been empty for 3 weeks now and im jonesing for a little bubbling. So far I have made a Hefewizen that did not come out well at all, and an Irish red that if it is half as good carbed and conditioned as it was warm and flat at bottling will be the best beer I have ever tasted (even has a wonderfull red color while still in the brown bottle:rockin:). So being a newb that is just learning to enjoy the wonderfull gift of yeast called beer what style do you think I should try next? So far I know I like American Hefewizen, Reds, and some Ambers. Still not fond enough of hops to handle an IPA (smells great just dont enjoy the taste yet). Also should mention that im still doing extract w steeping grains and partial boil, and have no trouble using a recipe I have to pick up myself instead of a kit, have not even used a kit yet. So let the sugestions fly.

I just picked up a Brewers Best American Cream Ale along with a 3.3 lb bag of Northwestern Amber LME.... My LHBS told me to mix in the amber LME with the American Cream Ale kit to make a Sam Adams Octoberfest clone. They said its one of there favorite extract beer kits. I cant wait to try it. Just an idea, I love the Brewers Best kits and havent had a, "off" batch yet!

1) Patersbier w/ WY 3787 fermented between 68-70. MMmmmm. Not hoppy, but a beautiful session Belgian.

2) If you don't like IPA's yet, maybe try a extra pale ale w/ cascade to get you in the mood. I think you'll grow to like them.

3) Nut browns are always good. As are porters. Both due up in my next round of ingredient purchases.

An APA or amber would be nice for a good, easy brew I think. The APA would help get your feet wet with hop schedules. I have a recipe for my version in my recipes,if you care to give it a look for ideas...

I think you have answered your own question. The nice thing is if you know of a specific beer you like, you can search here on HBT or Google a clone recipe for the one you want.

mmmmmmmmmm all sounds good. Just picked up the Sam Adams harvest pack today will do some sampling this weekend and hopefully have an idea. If I dont like any of those I may give the APA a shot.

Ok decision made, not sure if it will be my next brew but within the next 2 or 3 at the least will be a Rauchbier. Sampled the "Bonfire" from Sam Adams last night and was just about blown away. May be my past as a firefighter aka smokeeater but I just loved the strong smoke at the front, with the malt comming through nicely followed by a bitter similar to black coffee. Would I be crazy to try a PM for this one or should it wait untill I have the equip to go AG?

Rauchbiers sounds good. I would also like to try one, but I need to get a fridge setup for lagering first.

PM is a nice in between step. If you get lower conversion from your mash, it's not a loss because you still have some LME to add gravity. I would recommend checking into the Brew in a Bag (BIAB) threads in the all grain forum. You need only minimal equipment changes, and you might even want to go this route for all grain.

Try an oatmeal stout. It'll be good for Christmas time.

Or, make something aggressive and dry hop the **** out of it.

I'd do both :)
